Strawberry-Orange Pasta Salad

Anybody going on a picnic soon? How about camping?

Those seem to be the two occasions that my family would make salads growing up. They’re so easy! I made this one when some friends and I had a barbecue. I was a little weary, but ended up really liking the fruit/pasta/dressing/mayo combo.

Behold…Strawberry-Orange Pasta Salad!

Give it a try for your next barbecue, picnic or camping excursion. Beware though, the fruit and bow ties will eventually start to bleed onto the pasta. Don’t make it too far in advance.

Strawberry-Orange Pasta Salad
Ingredients:
2 cups farfalle (bow tie) pasta, uncooked
1/3 cup creamy poppyseed dressing
1/4 cup mayo
4 green onions, sliced
1 – 11 oz. can mandarin oranges, drained
1 cup sliced fresh strawberries

Directions:
1.) Cook pasta according to directions. Drain and cool.
2.) Mix dressing and mayo in a medium bowl.
3.) Add pasta and onions and toss.
4.) Gently stir in fruit.
5.) Refrigerate 1 hour and enjoy!
